- 1 pound ground turkey
- 1/4 cup water
- 1/4 cup chopped carrots
- 1/4 cup chopped zucchini
- 1/4 cup chopped bell pepper (any color)
- 1 tablespoon olive oil
- 1/4 cup cooked brown rice
- 1/4 cup plain, unsweetened yogurt
- Cook ground turkey in a skillet over medium heat until browned. Drain any excess fat.
- Add water, carrots, zucchini, and bell pepper to the skillet. Cook until vegetables are tender, about 5-7 minutes.
- Stir in olive oil and brown rice. Cook for another 2 minutes until heated through.
- Let the mixture cool completely.
- Serve a portion of the mixture topped with a tablespoon of plain yogurt.
Notes
- Store any leftover taco meat in an airtight container in the refrigerator for up to 3 days.
- You can substitute ground chicken or lean beef for the ground turkey.
- Ensure all vegetables are finely chopped to prevent choking hazards.
