Simple, healthy muffins for your dog made with sweet potato and pumpkin.

Ingredients

  • 1 cup whole wheat flour
  • 1/2 cup pumpkin puree (plain, not pie filling)
  • 1/2 cup mashed sweet potato (cooked and plain)
  • 2 tablespoons unsweetened applesauce
  • 1 tablespoon peanut butter (xylitol-free)
  • 1 teaspoon baking powder
  • 1/4 cup water

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with mini muffin liners.
  2. In a large bowl, combine the whole wheat flour and baking powder.
  3. In a separate bowl, whisk together the pumpkin puree, mashed sweet potato, unsweetened applesauce, and peanut butter until well combined.
  4. Add the wet ingredients to the dry ingredients and mix until just combined. The batter will be thick.
  5. Gradually add the water, mixing until a thick, scoopable batter forms. Do not overmix.
  6. Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
  7. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  8. Let the muffins cool completely in the tin before removing them.

  • Store cooled muffins in an airtight container in the refrigerator for up to 3 days, or freeze for longer storage.
