- 1 cup whole wheat flour
- 1/2 cup pumpkin puree (plain, not pie filling)
- 1/2 cup mashed sweet potato (cooked and plain)
- 2 tablespoons unsweetened applesauce
- 1 tablespoon peanut butter (xylitol-free)
- 1 teaspoon baking powder
- 1/4 cup water
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with mini muffin liners.
- In a large bowl, combine the whole wheat flour and baking powder.
- In a separate bowl, whisk together the pumpkin puree, mashed sweet potato, unsweetened applesauce, and peanut butter until well combined.
- Add the wet ingredients to the dry ingredients and mix until just combined. The batter will be thick.
- Gradually add the water, mixing until a thick, scoopable batter forms. Do not overmix.
- Spoon the batter into the prepared mini muffin tin, filling each cup about two-thirds full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool completely in the tin before removing them.
