- 1 cup sweet potato puree
- 1/2 cup whole wheat flour
- 1/4 cup oat flour
- 2 tablespoons chopped fresh parsley
- 1 tablespoon olive oil
- Preheat your oven to 350°F (175°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the sweet potato puree, whole wheat flour, oat flour, chopped parsley, and olive oil. Mix until a stiff dough forms.
- On a lightly floured surface, roll out the dough to about 1/4 inch thickness.
- Cut the dough into small cracker shapes using a cookie cutter or a knife.
- Place the crackers on the prepared baking sheet.
- Bake for 20-25 minutes, or until the crackers are firm and lightly golden.
- Turn off the oven and let the crackers cool completely inside the oven with the door slightly ajar. This helps them dry out and become crisp.
