This slow cooker chicken and rice is the ultimate comfort food made easy. Juicy chicken, fluffy rice, and flavorful seasonings simmer together into a hearty one-pot meal. Perfect for busy weeknights, meal prepping, or feeding the whole family with zero fuss.

Ingredients

  • 1.5 lbs boneless, skinless chicken thighs or breasts

  • 1 cup long-grain white or parboiled rice (uncooked)

  • 2.5 cups low-sodium chicken broth

  • 1 medium onion, diced

  • 2 cloves garlic, minced

  • 1 cup chopped carrots (optional)

  • 1 tsp salt

  • ½ tsp black pepper

  • 1 tsp paprika

  • ½ tsp dried thyme

  • 1 tbsp olive oil or butter

  • Optional Add-ins:

    • 1 can cream of mushroom or chicken soup

    • ½ cup shredded cheddar or cream cheese (for creamy version)

    • 1 cup frozen peas or corn (add during last hour)

Instructions

  • Lightly grease the inside of your slow cooker.

  • Add diced onions, garlic, and optional chopped veggies to the bottom.

  • Place chicken on top. Season with salt, pepper, paprika, and thyme.

  • Pour in rice and broth. Do not stir.

  • If using soup or cheese, add it on top but don’t mix yet.

  • Cover and cook:

    • LOW for 5–6 hours

    • HIGH for 2.5–3 hours

  • During the last 30 minutes, stir gently and check rice doneness. Add more broth if needed.

  • Garnish with herbs or shredded cheese. Serve warm.
