This slow cooker chicken and rice is the ultimate comfort food made easy. Juicy chicken, fluffy rice, and flavorful seasonings simmer together into a hearty one-pot meal. Perfect for busy weeknights, meal prepping, or feeding the whole family with zero fuss.
1.5 lbs boneless, skinless chicken thighs or breasts
1 cup long-grain white or parboiled rice (uncooked)
2.5 cups low-sodium chicken broth
1 medium onion, diced
2 cloves garlic, minced
1 cup chopped carrots (optional)
1 tsp salt
½ tsp black pepper
1 tsp paprika
½ tsp dried thyme
1 tbsp olive oil or butter
Optional Add-ins:
1 can cream of mushroom or chicken soup
½ cup shredded cheddar or cream cheese (for creamy version)
1 cup frozen peas or corn (add during last hour)
Lightly grease the inside of your slow cooker.
Add diced onions, garlic, and optional chopped veggies to the bottom.
Place chicken on top. Season with salt, pepper, paprika, and thyme.
Pour in rice and broth. Do not stir.
If using soup or cheese, add it on top but don’t mix yet.
Cover and cook:
LOW for 5–6 hours
HIGH for 2.5–3 hours
During the last 30 minutes, stir gently and check rice doneness. Add more broth if needed.
Garnish with herbs or shredded cheese. Serve warm.
