Simple homemade muffins for your dog, made with pumpkin and coconut.

Ingredients

  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 cup shredded unsweetened coconut
  • 1/4 cup vegetable oil
  • 1/2 cup pumpkin puree
  • 1/4 cup water
  • 1 egg

Instructions

  1. Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with mini muffin liners.
  2. In a large bowl, whisk together the flour, baking soda, and shredded coconut.
  3. In a separate bowl, whisk together the vegetable oil, pumpkin puree, water, and egg until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Spoon the batter evenly into the prepared muffin tin, filling each cup about two-thirds full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.

Notes

  • Store cooled muffins in an airtight container in the refrigerator for up to 3 days.
  • You can also freeze these muffins for longer storage.
