1 cup pumpkin puree (unsweetened)
1/2 cup peanut butter (no xylitol)
2 large eggs
1/4 cup coconut oil (melted)
1/3 cup unsweetened applesauce
1 1/2 cups oat flour (or whole wheat flour)
1 tsp baking powder (optional)
Optional Frosting:
1/2 cup plain Greek yogurt
2 tablespoons peanut butter
Preheat oven to 350°F (175°C) and grease a 6-inch round cake pan or line it with parchment paper.
In a large mixing bowl, whisk together pumpkin puree, peanut butter, eggs, applesauce, and coconut oil until smooth.
