1 ripe banana (mashed)
½ cup natural xylitol-free peanut butter (unsweetened)
1 large egg
1 cup whole wheat flour (or oat flour for gluten-free)
¼ cup unsweetened applesauce or water
1 tsp baking powder (optional, safe in small amounts)
Optional Frosting:
½ cup plain, unsweetened Greek yogurt
A few banana slices or crushed dog biscuits for decoration
Preheat your oven to 350°F (175°C). Lightly grease a small cake pan or silicone mold.
In a mixing bowl, mash the banana until smooth.
Add the peanut butter and egg, mixing until well combined.
Stir in the flour and baking powder, then slowly add applesauce or water to create a thick batter.
Pour the batter into the prepared pan and smooth the top.
Bake for 20–25 minutes or until a toothpick inserted comes out clean.
Allow to cool completely before adding the optional yogurt frosting and toppings.
Serve fresh or store in the fridge up to 5 days. For long-term storage, freeze individual slices.
