  • 1 lb lean beef stew meat (chuck or sirloin, cubed)

  • 1 cup carrots (peeled and chopped)

  • 1 cup sweet potatoes (peeled and diced)

  • ½ cup green peas (fresh or frozen)

  • ½ cup canned pumpkin puree (unsweetened)

  • ½ cup cooked brown rice or quinoa

  • 3 cups water or homemade low-sodium beef broth

  • 1 tsp turmeric (optional)

  • 1 tsp fresh chopped parsley (optional)

Instructions

  • In a large pot, add beef and water or broth. Bring to a boil, then reduce heat and simmer for 20 minutes.

  • Add carrots and sweet potatoes. Continue to simmer for 15–20 more minutes until all veggies are soft.

  • Stir in peas, cooked brown rice, and pumpkin puree.

  • Simmer an additional 5–10 minutes on low heat.

 

  • Let cool before serving. Store leftovers in the fridge (up to 5 days) or freezer (up to 3 months).
