A nutritious bowl with scrambled eggs, ground turkey, and fresh vegetables.

Ingredients

  • 2 large eggs
  • 4 oz ground turkey
  • 1 cup spinach
  • 1/2 cup chopped bell pepper
  • 1/4 cup chopped onion
  • 1 tsp olive oil
  • Salt and pepper to taste

Instructions

  1. Heat olive oil in a skillet over medium heat.
  2. Add ground turkey and cook until browned, breaking it up with a spoon.
  3. Add bell pepper and onion to the skillet and cook until softened, about 5 minutes.
  4. Push turkey and vegetables to one side of the skillet.
  5. Scramble the eggs in the other side of the skillet until cooked through.
  6. Stir in spinach and cook until wilted.
  7. Season with salt and pepper.
  8. Serve immediately.

Notes

  • Add your favorite hot sauce for extra flavor.
  • You can substitute kale for spinach.
