- 2 lbs ground chicken or turkey
- 1 cup brown rice, uncooked
- 1 cup chopped carrots
- 1 cup chopped sweet potatoes
- 1/2 cup chopped green beans
- 1/2 cup chopped zucchini
- 1/4 cup chopped parsley
- 2 cups low-sodium chicken or beef broth
- Place ground meat in the bottom of your crockpot.
- Add brown rice, carrots, sweet potatoes, green beans, zucchini, and parsley.
- Pour broth over the ingredients.
- Stir to combine.
- Cover and cook on low for 6-8 hours or on high for 3-4 hours.
- Let cool completely before serving. Store in the refrigerator for up to 3 days or freeze for longer storage.
