1 boneless, skinless chicken breast (200g)
1/2 cup white rice (uncooked)
1/4 cup diced carrots
1/4 cup green peas (fresh or frozen)
1/4 cup pumpkin puree (unsweetened)
1.5 cups water or low-sodium chicken broth
1 tsp olive oil (optional)
1. Dice chicken and vegetables.
2. In a pot, bring water or broth to boil.
3. Add rice and chicken, simmer 15 minutes.
4. Add carrots and peas, cook 10 more minutes.
5. Stir in pumpkin puree.
6. Cool before serving.
7. Portion and store in the fridge or freezer.
