- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/4 cup carob powder
- 1/2 cup mashed ripe banana
- 1/4 cup unsweetened applesauce
- 1/4 cup water
- 1 egg
- Preheat your oven to 350°F (175°C). Grease a mini muffin tin or line with mini muffin liners.
- In a medium bowl, whisk together the whole wheat flour, baking soda, and carob powder.
- In a separate bowl, mash the banana until smooth. Add the applesauce, water, and egg to the mashed banana and whisk until well combined.
- Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
- Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store cooled muffins in an airtight container in the refrigerator for up to 3 days.
