Ingredients

Scale
  • 1 cup whole wheat flour
  • 1 teaspoon baking soda
  • 1/4 cup carob powder
  • 1/2 cup mashed ripe banana
  • 1/4 cup unsweetened applesauce
  • 1/4 cup water
  • 1 egg

Instructions

  2. In a medium bowl, whisk together the whole wheat flour, baking soda, and carob powder.
  3. In a separate bowl, mash the banana until smooth. Add the applesauce, water, and egg to the mashed banana and whisk until well combined.
  4. Pour the wet ingredients into the dry ingredients and stir until just combined. Do not overmix.
  5. Spoon the batter evenly into the prepared mini muffin cups, filling each about two-thirds full.
  6. Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
  7. Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
