- 1 cup whole wheat flour
- 1 teaspoon baking soda
- 1/2 cup mashed ripe banana
- 1/4 cup grated carrots
- 1/4 cup unsweetened applesauce
- 1 egg
- 2 tablespoons vegetable oil
- Preheat your oven to 350ยฐF (175ยฐC). Grease a mini muffin tin or line with mini muffin liners.
- In a large bowl, whisk together the whole wheat flour and baking soda.
- In a separate bowl, mash the banana. Add the grated carrots, applesauce, egg, and vegetable oil to the mashed banana. Stir until well combined.
- Pour the wet ingredients into the dry ingredients and mix until just combined. Do not overmix.
- Spoon the batter into the prepared muffin tin, filling each cup about two-thirds full.
- Bake for 15-20 minutes, or until a toothpick inserted into the center of a muffin comes out clean.
- Let the muffins cool in the tin for a few minutes before transferring them to a wire rack to cool completely.
Notes
- Store cooled muffins in an airtight container in the refrigerator for up to 3 days or freeze for longer storage.
